Cooperation between Hydrosol and All Organic Treasures enables new concepts for meat alternatives.

Hamburg, April 2020: Vegetable alternatives to meat and sausage continue to be very popular with consumers - consumer interest and the trend towards this product category is hardly affected by the current corona crisis. On the contrary: understanding of the importance of a sustainable and balanced diet is growing - worldwide. For example, industry experts expect a steady increase in the growth of plant-based alternative products in the coming years. "Whether ethical or environmental aspects, reduced meat consumption remains the future topic for the food industry. This is particularly true in terms of supplying a growing world population with sustainably produced, protein-rich meat alternatives", explains Dr. Matthias Moser, Managing Director of Hydrosol.

Against this background, the specialist for stabilising and texturising systems is now relying on close cooperation with the raw materials supplier All Organic Treasures (AOT). The aim of the cooperation is to combine the know-how of both companies and to offer customers in the field of plant-based meat alternatives a wider range of products with individualised and exclusive solutions in future. The focus is on allergen- and GMO-free protein sources such as sunflowers, which have a positive image. Fabian Breisinger, Managing Director AOT: "Our own brand Sunflower Family is already successfully established in the food retail trade. We have built up a special reputation and competence in the field of sunflower protein-based vegan products such as ready-to-eat burgers. Our vegetable proteins are produced by the partial de-oiling of high-quality raw materials. The production is carried out under particularly gentle conditions. Therefore our products are characterised by their native protein structure as well as the content of various high-quality ingredients, e.g.
B-vitamins, secondary plant substances and minerals. This distinguishes them from conventional protein products. Furthermore, the functional properties, especially of our sunflower protein, are only significantly determined by the manufacturing process".

Since the proteins are a by-product of the sunflower oil production process, they also offer clear advantages in terms of sustainability. For the production of meat and sausage alternatives, Hydrosol uses three different textures: a dry texture for vegetable mince such as burger patties, a dry texture with a fibrous texture, e.g. for nuggets, and a wet texture for products with a muscle-meat-like structure such as vegetable fillet strips. "The topic of vegetable muscle meat alternatives continues to be a major challenge for the industry", comments Hydrosol Product Manager Florian Bark. "With their authentic, meat-like structure, high-moisture vegetable protein extrudates offer great potential. With AOT's expertise as a manufacturer of these high-moisture sunflower protein extrudates and our know-how in the stabilisation and texturisation of plant-based meat alternatives, we will be able to develop a wide range of individual product solutions in the future, giving our customers unique selling points in the market". A further benefit: The texturates are available in conventional as well as organic quality.

A small challenge, however, is to optimally adjust the colour and taste of the sunflower texturates and to avoid, for example, the off taste. "By nature, sunflower extrudates are rather dark in colour. For sausages or burger patties and other minced meat alternatives this is not a problem or even intentional. For nuggets or fillet strips, which are used as a chicken meat alternative, a light colour is naturally desired. We can adjust this very well by combining them with other protein concentrates. In our Plant Based Competence Centre we have already achieved very good results in various application trials," says Florian Bark.

The cooperation between AOT and Hydrosol was already initiated last year. At IFFA, Hydrosol presented vegan burger patties based on a sunflower texture from AOT for the first time. Hydrosol is the exclusive sales partner for this burger patty in the convenience and industrial products sector. With the future merger of the two companies' know-how, Hydrosol will go one step further and work closely with AOT from the very outset in the development of the texture. "In this way we will be able to create exactly the texturates that our industrial customers need for their end products. This exclusivity is an enormous advantage for all parties involved," reports Florian Bark. Dr. Moser adds: "In times when meatless products are continuously gaining in importance, we want to use German or European raw materials to bring sustainable products to the market that are free of soy and wheat. The cooperation with a company like AOT, which has extensive know-how in the sustainable production of plant proteins, is therefore a logical step for us in terms of future portfolio design.
